Delicious, easy and quick! My Very BEST Banana Muffin recipe! I love to make a quick batch, feed the kids and then stick one in their lunch box for lunch or an afternoon snack! Muffin cup full of sunshine!!!
I have made these and also frozen them and they turn out just scrumptious.
So, here it is friends. I have waited a long time to add this aspect to my blog. I hope you will enjoy it as much as I do. Some of you may know that my background is in counseling and human development, education and home economics. Maybe it makes no sense, my blog was an accident and to add this now may seem… odd?

Odd is my superpower. But I have grown in this space. (No, not just the size of my butt.) But in a million different ways. I want this space to be a place where you find Grace, Truth, and all the in-betweens. Had I known then what I know now? Well, I didn’t plan this trip… so I can’t say what I would or wouldn’t do differently. Some of you may choose to go, some may join on for the madness. - • 1/2 cup Flour
- • 1 tsp Baking powder
- • 1 tsp Baking soda
- • 1/2 tsp Salt
- • 3 RIPE bananas; peeled and smashed
- • 3/4 cup Sugar
- • 1 Egg
- • 1/3 cup Butter; melted
- • 1 Tbsp Brown sugar; dissolved into melted butter
- • 1 tsp Vanilla extract
- Preheat oven to 350 degrees. In a mixing bowl stir together flour, baking powder, baking soda, salt and white sugar. Add mashed bananas, egg, and brown sugar butter mixture. Blend until smooth. Place heaping ice cream scooper of batter into muffin cup or greased muffin tin. Bake for 25-30 minutes or until muffins springs back.
